    Pineapple Dessert

     

    Gelatin- 3 teaspoon
    Water – ¼ of a cup.
    Pineapple pieces crushed without juice- 1 cup.
    Egg (white and yellow separated) – 3
    Sugar powdered- ½ cup
    Pineapple juice- 1/3 cup
    Thick coconut milk- 1/3 cup
    White rum- 2 table spoon
    Fresh thick cream- 2/3 cup

     

    Mix gelatin in water and place that vessel in another bowl with hot water. Stir the water until the gelatin is dissolved. . Then take the vessel from the hot water and let it cool.
    Put the pineapple pieces in each glass. Beat the egg yellow and sugar well. Mix it with thick coconut milk, pineapple juice, rum and gelatin mix.
    Beat the cream by placing it on a ice. Mix it to the coconut milk mixture before the bubbles of beat cream disappears. Beat the egg white mix that too to the mixture. Pour this to the glasses and let it set. Can decorate this with beat cream and also pineapple pieces. This pineapple dessert is very good after a heavy lunch or dinner. It helps in digestion too.
    This can be prepared one day early of the day required and keep it refrigerated. Do not keep it in freezer.
